Meet the talented chef at Indie.
We meet the passionate Indian chef Rajendra Singh in the atmospheric premises of the Indie restaurant in Grønnegata 39.
-"I've lived here for a year and exciting opportunities have opened up in a new place," smiles Rajendra Singh.
He is originally from northern India in a city called Dehradun, with a population of over one million.
The contrast to Northern Norway is of course huge, but for now he is enjoying himself.
-"I'm very happy with the quiet city, the northern lights, the midnight sun and the dynamic culture," says Singh.
Since completing his 3-year education in culinary arts, he has worked in places such as India, West Africa, Hungary, Sweden and Denmark.
In Tromsø, he works on combining northern Norwegian and local ingredients with Indian and authentic flavors. A challenge he finds exciting.
-Indian food is known for rich flavors, varied ingredients and intricate cooking methods. Aroma, balance of flavors, the combination of ingredients and spices.
He has lived in Scandinavia for a few years and got to know the culture.
-"I am strongly committed because I have been working with Indian food for so many years, especially in a Scandinavian country. So I have understood a little bit what people like, and I try and deliver the guests authentic Indian flavors.
He is happy to be bringing some global flavors to the emerging Arctic metropolis of Tromsø.
-Food allows us to learn about different cultures and different ways of doing things. It gives us a chance to share and talk with friends and family. We can learn a lot about their culture and society.
